- 2 cups water (400ml)
- 2 tablespoons chopped fresh parsley (30g)
- 2 tablespoons chopped fresh cilantro (30g)
- 2-4 eggs
Instructions:
1. Heat oil in a large cast-iron skillet or omelette pan over medium heat.
2. Add onions and cook until softened, about 8 minutes.
3. Add bell peppers and cook until tender, about 5 minutes.
4. Add garlic, smoked paprika, cumin, salt, and pepper. Cook for 1 minute.
5. Add crushed tomatoes, water, parsley, and cilantro. Stir to combine.
6. Bring mixture to a simmer and cook for 10-15 minutes, stirring occasionally.
