Ingredients:

- 1 cup uncooked Calasparra rice (180g)

- 2 tablespoons olive oil (30ml)

- 1 onion, diced (120g)

- 2 cloves garlic, minced (6g)

- 1 pound shrimp, peeled and deveined (450g)

- 1 pound chorizo, sliced (450g)

- 1 pound chicken, cut into bite-sized pieces (450g)

- 2 cups chicken broth (475ml)

- 1 cup water (240ml)

- 2 teaspoons saffron threads, soaked in 2 tablespoons hot water (10g)

- 1 teaspoon smoked paprika (5g)

- 1 teaspoon dried oregano (5g)

- Salt and pepper, to taste

- Lemon wedges, for serving (optional)

Instructions:

1. Heat the olive oil in a large paella pan or skillet over medium-high heat.

2. Add the onion and garlic and cook until softened, about 5 minutes.

3. Add the shrimp, chorizo, and chicken and cook until browned, about 5-7 minutes.

4. Add the rice and cook for 1-2 minutes, stirring constantly.

5. Add the chicken broth, water, saffron, smoked paprika, and oregano. Season with salt and pepper.

6. Bring to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes or until the rice is tender and the liquid has been absorbed.

7. Remove from heat and let rest for 5 minutes before serving.

Note: Traditional Paella is cooked over an open flame, which gives the rice a crispy crust called the "socarrat". If you don't have access to an outdoor grill or open flame, you can achieve a similar effect by broiling the Paella for 2-3 minutes before serving.
